Orange Boiled Chicken Recipe

Ingredients

8 (10 ounce) breasts fresh chicken breasts

2 tablespoons vegetable oil

2 cloves garlic, minced

1/4 teaspoon salt

1 tablespoon vegetable oil

4 skinless, boneless chicken breast halves

1 (16 ounce) package frozen mixed vegetables, thawed

1/2 cup orange juice

1 cup sliced mushrooms

1 lemon, juiced

1/2 cup raisins

Directions

Heat oil in a large skillet over medium heat. Heat oil in pan, and brown chicken while still warm, about 5 minutes. Remove chicken from pan, and place in a separate large bowl. Heat remaining oil in skillet over medium heat.

Mix together chicken, vegetable oil, garlic, salt, and oil. Reduce heat to medium low. Stir in chicken, mixed vegetables, orange juice, mushrooms and lemon juice. Bring to a boil, and reduce heat to low. Reduce heat to medium low. Stir in raisins. Cover, reduce heat to medium, and simmer for 15 minutes, or until chicken is no longer pink. Stir chicken into vegetables, orange juice, mushroom mixture, chicken and vegetable mixture. Cover loosely, cover, and simmer 15 minutes more, stirring occasionally.

Very good and easy to make. I was expecting a lot more garlic but it was really present. My husband raved about it. I would recommend using whole cloves, rather than the sprig, because I thought the dressing was too thin. I also added thyme garlic but after making several changes the next time I made this it was too bland. Perhaps I will use whole garlic next time and see what kind of dressing to use. Overall it was pretty good, but the mushrooms and basil felt a bit heavy. Not a fan of Pisco Sours, but really liked this little development.
