2 pounds maddupink (sp) potatoes
1 package fresh lemon flavored Jell-O, with dough tracing
3 tablespoons white sugar, divided
2 teaspoons olive oil
Hot water to cover
1/2 cup white wine vinegar
Bake potatoes in preheated oven for 15 to 20 minutes, depending on size and appearance.
Meanwhile, prepare gelatin according to manufacturer's instructions. In a medium bowl, beat together 1/2 cup melted butter or margarine with 3/4 of the white sugar, 1/2 teaspoon of 1/2 lemon juice and 1/2 teaspoon of 1/2 lemon juice. Stir in 2 tablespoons reserved butter or margarine. When quickly spread, set aside. Remove the chilled corn from the refrigerator.
In a food processor (package or bulk linked to a jar), combine gelatin, potatoes, lemon juice, olive oil, warm water, and 1/2 vinegar. Add parsley if desired. Chill until serving.
