1 4 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
2 teaspoons baking soda
1 teaspoon pumpkin pie spice
1/2 teaspoon salt
1 (8 ounce) package cream cheese, softened
1 2/3 cups white sugar
3 eggs
1 tablespoon yellow food coloring
1 teaspoon vanilla extract
4 cups chopped pecans
Make the Filling: Mix flour, baking powder, baking soda, pumpkin pie spice, salt, cream cheese and sugar together. Beat together egg and yellow food coloring in small bowl. Stir in pumpkin pie spice, salt and vanilla.
Mix cream cheese, sugar mixture and pecans until blended. Spread in greased 9 inch pie pan; refrigerate at least 8 hours. Serve with whipped cream.
