1 cup butter, softened
2 cups white sugar
2 eggs
1 teaspoon vanilla extract
3 cups all-purpose flour
2 tablespoons baking powder
1 teaspoon baking soda
1 teaspoon baking powder salt
1 teaspoon cream of tartar
1 teaspoon cream of tartar/flax seed mix
1 teaspoon cream of tartar
3 cups flaked coconut
Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
Beat butter, sugar, eggs and vanilla together in large bowl until well blended. Stir flour into butter mixture just until incorporated; stir in coconut. Drop by rounded spoonfuls onto cookie sheets.
Bake for 8 to 10 minutes in the preheated oven, until edges of the cookies are slightly browned. Remove from cookie sheets to cool completely.
