Fruit Filled Cookies Recipe

Ingredients

1 cup butter, softened

2 cups white sugar

2 eggs

1 teaspoon vanilla extract

3 cups all-purpose flour

2 tablespoons baking powder

1 teaspoon baking soda

1 teaspoon baking powder salt

1 teaspoon cream of tartar

1 teaspoon cream of tartar/flax seed mix

1 teaspoon cream of tartar

3 cups flaked coconut

Directions

Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.

Beat butter, sugar, eggs and vanilla together in large bowl until well blended. Stir flour into butter mixture just until incorporated; stir in coconut. Drop by rounded spoonfuls onto cookie sheets.

Bake for 8 to 10 minutes in the preheated oven, until edges of the cookies are slightly browned. Remove from cookie sheets to cool completely.

I wanted something a little different from what I usually get but didn't want too much sugar so added plain old table sugar. I also didn't want it too filling so used 2 heaping tablespoons of unsweetened applesauce mixed with 1 tsp of vanilla & 1/2 tsp of salt. This was so good and there was so much yeast! I used 2 packages of McCormick's Golden Delicious frozen vegetables (fried chicken, Pork roast and soya bean). Everyone loved it and I will definitely make this again!
