Microwave Squash with Basil Seeds Recipe

Ingredients

1 (3 ounce) package instant ricotta cheese, torn into small pieces

1 cup water

1 cup chopped onion

2 tablespoons olive oil

1 pound white and sweet saltine cracker crumbs

1 (6 ounce) can tomato paste

1 teaspoon ground black pepper

1 teaspoon dried basil

1/2 teaspoon dried oregano

1/2 teaspoon dried sage

1/2 teaspoon crushed red pepper flakes

Directions

In a large bowl, mix pasta, water, onion, olive oil, cracker crumbs, tomato paste, brown sugar, vinegars, basil, oregano, sage, red pepper flakes.

Cover bowl, and microwave for 1 minute on Microwave setting. Stir in the ricotta and water. Microwave another minute, stirring gently. Return the cheese to bowl, and mix thoroughly.

I followed the recipe exactly making no changes and these were amazing! My husband complained when they were all gone. My only warning would be to be careful when grilling over high heat such as a propane or propane/butane can.

This was a great main dish, but I prepared it in such a way that it would make a great brunch. I mashed the potatoes and then cooked them in 1/2 cup of oil until they were pretty soft. I then added them to a baking dish and took the banana slices and pressed them down, making a sandwich. I would make this again, but I thought it was better to leave it as is and try another recipe. Great! I will be making this over and over. It was a great side dish, and made dinner a little easier. I used this method to make mini muffins, and they ended up being very nice sized. I enjoyed this recipe as a whole. Will make this over and over. The only changes I made, I added more bread crumbs, 1 teaspoon of garlic powder and 1 teaspoon of salt, and instead of almond extract I used apricot

This was great, but it makes more sense when you break it down. So instead of cream of mushroom, I put cream of chicken and instead of cream of chicken and rice I put the peas and I cooked them in a little more cream of chicken. Instead of using feta, I used white bread, and I put the peas and cilantro in white bread and then I microwaved the peas they came out of the oven. I'm not recommending changing things, but this is a great basic recipe. I will probably make it over and over. So far, so good. Next time, I'm going to try this with something a little more exotic, like green beans. It could be that green beans are a little too leafy for my taste, so I'm keeping it and making other changes.

I made this recipe for a bridal brunch. It was very tasty. I also baked it in the oven for about 15 minutes. The cheese in the squash definitely helps.
