Tico Omelet Recipe

Ingredients

1 cup frozen corn muffin mix

4 eggs

1/2 (15 ounce) can cream of mushroom soup

1 1/2 teaspoons salt

1 tablespoon Worcestershire sauce

1 tablespoon hot pepper sauce

5 (10 inch) deep-dish pie or pancake baking pan liners

Directions

Preheat oven to 400 degrees F (200 degrees C). Lightly grease an 8x8 inch baking pan.

In a medium bowl, whip together 1 cup muffin mix, eggs and cream of mushroom soup. Add salt and Worcestershire sauce and hot pepper sauce and stir to combine. Pour mixture into prepared pan.

Bake in preheated oven for 16 minutes, until golden brown.

Increase oven temperature to 450 degrees F (230 degrees C) and bake for 45 to 55 minutes, until soft.

I followed the recipe exactly making no changes and these were amazing! My husband loved them, my sister loved them and my husband loved sushi. I would recommend this recipe to anyone, great to be served as a family dinner or even a nice entertaining dinner. Just to add a side of flavor, I served my tuna salad in a cucumber and red pepper omelet. Nice and different.
