3 cups milk
2 eggs
5 bananas, cut into 1 inch squares
1 teaspoon vanilla extract
2 tablespoons orange juice concentrate
1 (16 ounce) can sliced fresh strawberries, drained
1/4 cup white sugar
2 teaspoons vanilla extract
1/2 teaspoon lemon juice
1/2 teaspoon lemon zest
1 cup flaked coconut for decoration
Preheat the oven to 450 degrees F (220 degrees C). Butter a 9 inch springform pan.
Melt milk in a saucepan in 3 tablespoons, beat eggs, and stir into milk.
Sift together the flour, baking powder and baking soda, set aside. Combine the baking mix, bananas, sugar, orange juice concentrate, strawberries, sugar, vanilla extract, lemon juice, orange zest, coconut, lemon peel, and banana slices. Pour into prepared pan.
Bake in preheated oven for 20 minutes, until a toothpick inserted into center of pan comes out clean. Cool completely before cutting into 1 inch squares.
