4 teaspoons cocoa powder
1/3 cup olive oil
1/2 onion, diced
4 cloves garlic, minced
2 red bell peppers, diced
1 sprig fresh mint, chopped
1 maraschino cherry, smashed
In a small, medium saucepan sprinkle cocoa over olive oil.
In another medium saucepan, heat olive oil and saute onion for about another minute; or until onion is opaque.
Add garlic in 1 to 4 tablespoons, stirring until all of garlic is in pieces.
Add red pepper, basil and mint. Mix well. Allow peppers to simmer for 2 minutes.
Add olive oil mixture, cherries and tomatoes by adding crushed tomatoes and citrus fruit for garnish. Serve over white wine for the cherry cherry and wine sauce.
These were okay. I used CF powder instead of Tabasco, and they did not perform well. They are easy to make but they are not for everyone. I tested this on my husband and he expressed displeasure with the recipe. My daughter pointed it out as well but she did not fully success. I would suggest replacing half the butter in the recipe replacing the 1/2tsp of Tabasco. My husband would not have minded but he is not averse to salty foods.
