1 (9 inch) pie crust, baked
3 large lemon slices
1 egg, beaten
5 tablespoons butter
1 cup brown sugar
1 teaspoon lemon peeler
1/4 teaspoon salt
3 lemons, sliced
Preheat oven to 350 degrees F (175 degrees C). Butter a 9 inch pie pan.
Place lemon slices in a large bowl; mash with hands until smooth. Pour lemon cream over slices and toss gently. Arrange lemon slices on bottom of dish.
Beat egg in large bowl until fluffy; mix with butter and sugar. Gradually beat in lemon peeler. Pour over slices and top with lemon slices.
Bake in preheated oven for 50 minutes, or until crust is set and piped. Cool before serving.
