1 pound ground beef
1 onion, chopped
1 stalk celery, chopped
1 cup tomato juice
1 (1 ounce) package taco seasoning mix
1 cup shredded Cheddar cheese
In a medium bowl, mix the beef, onion, celery and tomato juice. Mix in taco seasoning and cheese. Roll pan into a 12 inch square, cutting slits in the middle to allow steam to escape.
Place a lid with a metal rim on the pan, and the bottom of the pan should lie approximately 1 inch above the rim. Fill each square with 1/2 cup cheese. Roll up edges of pan so that they are flush with the top.
Place them on a large baking sheet. Bake in a preheated 350 degrees F (175 degrees C) oven for approximately 3 hours, or until heated through.
