Winter Salmon Recipes

Ingredients

1/4 cup butter

1 (10 ounce) package frozen mixed vegetables

1 cup chopped onion

1/2 cup sliced carrots

8 slices white bread, warmed

2 tablespoons lemon juice

4 cups saltine crackers

8 ounces salmon, cut into 1 inch cubes

1 (16 ounce) package frozen chopped spinach, divided

2 ounces shredded mozzarella cheese, divided

1/2 cup margarine

Directions

Preheat oven to 350 degrees F (175 degrees C). Place 1/4 cup butter in a 9x13 inch baking dish.

In a large bowl, mix mixed vegetables and onion. Spread stuffed vegetables onto bottom of baking dish. Cook over medium heat in microwave for 30 to 45 minutes, stirring occasionally, until vegetables are tender.

Spread stuffed vegetables evenly over vegetables. Sprinkle cheese over the stuffed vegetables and sprinkle with margarine.

Bake uncovered 20 to 25 minutes in the preheated oven.
