2 cups all-purpose flour
3/4 teaspoon baking powder
3/8 teaspoon baking soda
1/2 teaspoon salt
1/2 cup butter, melted
1 egg
1 1/2 teaspoons vanilla extract
3 cups rolled oats
3 tablespoons confectioners' sugar for dusting
salt to taste
In a large bowl, mix flour, baking powder, baking soda and salt. Set aside for 30 seconds to blend ingredients.
Heat the butter or margarine in a saucepan over medium heat. Stir oil into flour mixture, stirring constantly.
In a separate bowl, stir together egg and vanilla extract, mix until slightly moistened.
In a 2-quart saucepan, mix oats, butter, egg and vanilla. Bring to a small boil, then stir in oatmeal mixture, salt and sugar. Boil 30 seconds.
Return mixtures to a medium saucepan, and stir in 2 tablespoons grated orange zest. Bring to a slow boil, stirring constantly. Cover heat, and stir in reserved cinnamon and blueberry glaze back, if desired. Heat through.
