2 eggs
2 cups white sugar
2 tablespoons lemon juice
1 1/2 teaspoons lemon zest
1 1/2 quarts heavy cream, softened
1 teaspoon vanilla extract
1 bottle lemon-lime flavored carbonated beverage (e.g. Coca-Cola, Pepsi)
1 cup confectioners' sugar
1 1/2 tablespoons lemon zest for garnish
fresh orange juiced to taste
Slice eggs open. Pour 1 cup sugar into a saucepan. Heat to between 234-239 degrees F.
In a medium bowl, mix the lime juice, lemon zest, cream and vanilla until smooth and spreadable. Beat in 1/2 lemon-lime soda. Beat in 2/3 lime juice; serve immediately. Of course, eat later!
