2 teaspoons butter, softened
2 tablespoons unsweetened applesauce
2 tablespoons brown sugar
2 tablespoons Jell-O
2 egg yolks
1 teaspoon vanilla extract
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9 inch square baking dish.
Place butter, applesauce, brown sugar, jelly- butterscotch pudding mix and egg yolks into a small saucepan. Mix well and allow to cool.
In a small bowl, stir together brown sugar, xylitol, gelatin and vanilla extract. Pour mixture over applesauce mixture in prepared pan.
Bake in preheated oven for 25 minutes, or until applesauce is tender and pudding is a deep golden color. Serve warm or cold.
