1 (2 pound) whole chicken, cut in half
1 onion, chopped
1/2 cup fresh lemon juice
1/3 cup vodka
1/3 cup vegetable oil
1 (10.75 ounce) can condensed chicken broth
1 whole carrot
Preheat oven to 350 degrees F (175 degrees C).
Heat oil in a large skillet over medium-high heat. Season chicken with salt and pepper to taste. Place onion in skillet. Stir in lemon juice and vodka. Mix together and cook, stirring constantly, until chicken is cooked through and juices run clear. Transfer pan to a platter and pour chicken broth into skillet. Sprinkle carrot over chicken. Cover skillet and place in oven for 30 minutes.
Assemble the slop: Combine shrimp, sweet potatoes and carrots in a large bowl; spoon over chicken and vegetable slop. Mix together and serve.
