1 cup butter, softened
2 eggs, lightly beaten
3 large ripe bananas
1 1/2 cups fresh pineapple juice
1 (1 ounce) package instant vanilla pudding mix
Preheat oven to 350 degrees F (175 degrees C). Sift together the flour and baking powder. Set aside.
Mix together the sugar, eggs and bananas. Mix banana mixture into the flour mixture. Stir together egg mixture and pineapple juice. Pour into the muffin liners, roll and press slightly to smooth.
Bake in preheated oven for 25 to 30 minutes, or until a toothpick inserted in center comes out clean.
