1/2 cup buttermilk baking mix
1/2 cup unsalted butter
1 (8 ounce) package cream cheese, softened
1/2 cup lemon juice
1 teaspoon vanilla extract
1 (10 ounce) package frozen whipped topping, thawed
1 (12 ounce) container frozen whipped topping, thawed
1 (3.5 ounce) package instant lemon pudding mix
1 (8 ounce) container frozen whipped topping, thawed
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
In a large bowl, cream together the butter and cream cheese. Beat in the lemon juice and vanilla. Stir in the thawed frozen whipped topping. Spread evenly into the prepared baking dish.
Bake in the preheated oven for 45 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool before cutting into squares.
To make the frosting: In a medium bowl, beat together the pudding mix and 1/2 cup of the thawed frozen whipped topping. Spread over the frosting, and place in the freezer until firm.
