Chicken Siu Vii Recipe

Ingredients

1/4 cup olive oil, divided

1 onion, peeled and sliced

1 medium yellow onion, peeled and sliced

2 tablespoons garlic powder

2 teaspoons dried oregano

1/2 teaspoon dried basil

1 teaspoon minced fresh oregano

1 teaspoon dried basil

1/2 teaspoon smoked paprika

1/4 teaspoon salt

2 tablespoons curry powder

2 teaspoons ground black pepper

1/2 teaspoon dried oregano

1 teaspoon dried basil

2 tablespoons chopped fresh parsley

Directions

Heat olive oil in large saucepan over medium heat. Saute onion and garlic in olive oil for about 2 minutes, stirring occasionally. Place in pan; cook over medium heat for 3 minutes. Add oil and onions to pan; cook for about 1 minute. Stir in ingredients from pan. Cook over medium heat for 5 minutes. Add squash, mushrooms and chicken; cook over medium heat for 3 minutes. Season with oregano, basil, olive oil, mushrooms, parsley and salt. Cook, stirring occasionally, for 3 minutes.

I submitted this recipe many years ago as an experiment when I was learning about charcoal. It works very well and is a great starting point. I also substituted egg replacer. I have a jar of tomato sauce and used that. I did not have salsa so I left out the beans and used diced tomatoes. I would recommend checking at least twice to be sure everything is proper.
