1 (.5 ounce) package dry white wine baking mix
2 cups distilled white vinegar
1 teaspoon vegetable oil
1 cup water
1 pound water chestnuts
1 cup yellow squash
1/2 cup cucumber, halved
1/2 medium carrot, just cut into 1/4-inch rounds
1/4 teaspoon salt
1/8 teaspoon ground black pepper
10 leaf lettuce
Preheat oven to 375 degrees F (190 degrees C).
Mix the dressing and vinegar in separate bowls and spread a layer over the bottom of a 9x13-inch baking dish. Sprinkle with 1 cup water chestnuts and vegetables; mix with remaining 2 cups water chestnuts and vegetables. Drizzle with 1/4 cup olive oil, white wine vinegar, olive oil mixture. Top with 10 lettuce leaf rolls.
Bake in preheated oven for 40 to 45 minutes, or until bubbly.
