1/4 cup freshly grated Parmesan cheese
1/2 cup shredded mozzarella cheese
1/2 cup pepper jack sausage (optional)
1 (32 ounce) package sliced bell peppers
1 (8 ounce) package sliced mushrooms
1 teaspoon Worcestershire sauce
1 (16 ounce) can tomato paste
1 (8 ounce) container sour cream
2 tablespoons chopped fresh parsley
Preheat the broiler.
In a large mixing bowl, beat together Parmesan cheese, mozzarella cheese, pepper jack sausage, peppers and mushrooms until well mixed.
For the filling: In a small bowl, mix tomato paste, sour cream, parsley, chicken chunks, mushrooms, meat cubes, bell peppers, bell peppers, tomato paste mixture and sour cream.
Grab a handful of pepper jack sausage, pour over filling in 10 1/2 inch round pans, and refrigerate to marinate.
