1/2 cup butter, softened
1 cup packed brown sugar
1 cup pecan halves
1 1/2 cups white sugar
1 egg
1 teaspoon vanilla extract
1 cup corn syrup
1 teaspoon vanilla extract
1 cup chopped pecans
Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch pan.
In a large bowl, cream together the butter, brown sugar, pecans and sugar until smooth. Beat in the egg, egg and vanilla. Combine the corn syrup, pecans and vanilla. Stir until well blended. Pour mixture into the prepared pan. Cover and refrigerate overnight.
While the dough is chilling, prepare the frosting: In a large saucepan, combine the corn syrup, pecans and vanilla. Bring the mixture to a boil over medium heat, stirring constantly. Do not over-bake the dough. Use with your hands, or cut into small pieces.
I followed the recipe exactly making no changes and these were amazing! My husband complained when they were all gone. My only warning would be to be careful when grilling over high heat such as a BBQ! Also, be careful when frying your blueberry pie with a high heat gun like a trapdoor grill. It can burn your fingers and toes.
