Spinach and Tomato Soup Recipe

Ingredients

1/2 cup butter, softened

1 (16 ounce) can diced tomatoes

1 (10 ounce) can diced mushrooms

1 (12 ounce) package frozen chopped spinach

Directions

In a large saucepan, combine butter, tomatoes, mushrooms and spinach. Bring to a boil, stirring frequently. Reduce heat, and simmer 15 minutes. Remove from heat and stir in potatoes. Stir until potatoes are tender.

Everything is great except for the tomato sauce. I made a baked tomato soup and it came out fantastic even though I substituted lemon juice for the tomatoes. I always add a little from this site...
