2 cups quick cooking oats
1 cup butter
1 1/2 cups brown sugar, sifted
2 eggs, beaten
1 cup chopped peaches
2 2/3 cups chopped walnuts
1 teaspoon vanilla extract
1 cup water
1 cup vegetable oil
1 1/2 teaspoons lemon extract
1 cup Soya milk
1/2 cup honey
Preheat oven to 350 degrees F (175 degrees C). Grease and flour 2 (9 inch) round pans.
Beat together the brown sugar, butter, brown sugar, eggs, peaches, walnuts, vanilla extract and water until fluffy. Stir the oats, peaches, and walnuts into this mixture until well blended. Fold the lemon extract into the batter. Spread the fruit mixture evenly over the prepared pan.
Bake in the preheated oven for 60 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool completely before frosting.
To make the frosting, combine 1 cup soya milk with 1 cup honey and cream the sugar and butter until smooth.
