1/2 teaspoon salt
1/2 cup water
3 eggs
1 cup vegetable milk
1 teaspoon vanilla extract
Preheat oven to 300 degrees F (150 degrees C).
In a large bowl, beat egg, water, milk and vanilla in a fast cold medium speed 60 seconds. Continue to beat, 20 to 45 seconds, until mixture is stiff, about 4 to 5 minutes. Stir in dried fruit, omelet bean and yogurt, a little at a time, until just combined. Pour into 9x13 baking dish and sprinkle with cookies.
Let bake 90 minutes. With a wooden spoon, remove top layer of cookies. Push through a sieve into the pudding mixture, then into a glass to cool. Let stand 5 minutes. In a saucepan, stir together milk and butter. Bring to a boil, then remove from stove. In a small bowl, whisk egg, milk and vanilla until creamy. Pour over apples. Toss.
Before serving, top apples with whipped cream for dipping.
