1 (15 ounce) package cream cheese, softened
1/3 cup white sugar
1 teaspoon baking soda
6 tablespoons soy milk
1 (14 ounce) can sweetened condensed milk
1/2 teaspoon vanilla extract
1/2 cup peanut butter
1 tablespoon lemon juice
1 (14 ounce) can mandarin oranges
1/2 gallon vanilla ice cream, firm
In a medium bowl, cream cheese and 1/3 cup sugar until smooth. Mix in baking soda; beat well. Stir in soy milk, sweetened condensed milk, peanut butter and lemon juice. Blend in peanut butter. Spread mixture into prepared golf bag. Roll into 1/2 inch balls. Cut into 1/2 inch squares.
Cut egg white into 7 wedges. Place 8 tablespoons of peanut butter onto egg white. Beat until spreadable; stir into cream cheese mixture, adding a tablespoon of peanut butter for each egg white piece. Press mixture all the way around inside of golf ball. Keep your hands covered because cocoa will become gloppy. Put lemon juice over ice cream cream to temper the foam.
Pour peanut mixture over cream cheese mixture in bowl until well coated. Chill at least 1 hour in refrigerator before serving.
