Brie Cheese Stuffed Eggs with Bacon Recipe

Ingredients

1/2 pound bacon, sliced

2 eggs, beaten

1 egg yolk

1/3 cup melted butter

1/4 cup milk

1 cup shredded Cheddar cheese

1/8 teaspoon salt

1/4 teaspoon pepper

Directions

Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble, and set aside.

In a large bowl, beat eggs and egg yolk. Stir milk into egg yolk mixture and beat well. Stir in cheese, salt, pepper, bacon, and bread cubes until well coated. Roll mixture into 1/3 inch balls. Place in a greased 10 inch springform pan.

Arrange bread cubes in the bottom of 1/3 inch springform pan. Spoon egg mixture over bread cubes.

Bake in preheated oven for 35 minutes. Reduce heat to a medium-low 450 degrees F (220 degrees C). Place egg filling in center of pan and cover with egg. Seal and bake for 25 minutes.

Meanwhile, preheat oven to 350 degrees F (175 degrees C).

Bake at 350 degrees F (175 degrees C) for 45 to 50 minutes or until knife inserted in center comes out clean.
