4 large eggplant, halved and sliced
1 cup cooked and crushed Swiss cheese
1 (10 ounce) package Mascarpone cheese and Havarti cheese
6 ounces shredded mozzarella cheese
2 cups shredded Cheddar cheese
Preheat oven to 350 degrees F (175 degrees C). Place eggplant slices in a medium baking dish. Using a 2 inch slotted spoon, transfer to a large mixing bowl. Sprinkle cheese over eggplant & cheese, and spread bottom with mozzarella cheese. Sprinkle bacon or Swiss cheese over eggplant, and top with crumbled bacon.
Bake in preheated oven for 45 minutes, stirring occasionally, until eggs are tender.
