1/2 cup butter, softened
1/2 cup all-purpose flour
3 cups powdered sugar
1 (1 ounce) envelope instant lemon pudding mix
1 1/2 teaspoons baking powder
1/8 teaspoon salt
1 1/2 cups milk
3 egg whites
1/4 teaspoon lemon zest
4 slices white bread, cut into 1 inch cubes
Preheat oven to 350 degrees F (175 degrees C). Place quail in a 9x5 inch baking dish. Sprinkle butter over quail and sprinkle with flour.
In a large bowl, beat cream cheese, sugar, pudding mix, baking powder and salt. Stir in milk, egg whites, lemon zest and lemon zest. Mix thoroughly. Transfer quail to baking dish.
Bake quail at 350 degrees F (175 degrees C) for 45 minutes. Brush with lemon butter drizzle.
Cool quail on baking sheets for 15 minutes, then turn out onto a wire rack. Brush with lemon butter drizzle.
