Drying Pan Cake II Recipe

Ingredients

1 cup water

1 teaspoon salt

6 sprigs fresh mint

2 1/2 cups butter, softened

1 1/2 cups white sugar

1 3/4 cups packed light brown sugar

3 eggs

1 teaspoon vanilla extract

1/3 cup vegetable oil

2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon baking powder

1/2 teaspoon ground cinnamon

Directions

Preheat the oven to 350 degrees F (175 degrees C). Grease and flour two 12-cup pan pans. Sift together the brown sugar, eggs, milk, butter and white sugar. Beat the egg mixture into the brown sugar mixture, mixing only after each addition. Beat the flour into the entire mixture. Stir in the oil, baking soda, salt, baking powder and cinnamon. Pour batter into prepared pans.

Bake in the preheated oven for 60 minutes or until a toothpick inserted slightly near the center makes a little sound when tapped in. Cool before removing from pan. Cool completely. Cut into slices.
