1 whole skin of chicken, cubed
1 cup shredded Cheddar cheese
2 eggs
2 cloves garlic, minced
1 (1 ounce) package taco seasoning mix
1 lime, juiced and zested
8 (10 inch) flour tortillas
Preheat oven to 400 degrees F (200 degrees C).
Place chicken in a large dish or bowl and tightly coat with aluminum foil. Discard foil and press chicken into foil with two forks. Note: Depending on your preference, grease foil or brush with egg spray.
In a large bowl, mix shredded cheese, eggs, garlic, taco seasoning, and lime juice.
Spread chicken mixture on foil, roll edges of tortillas, and press into center of each tortilla. Place under toppings and top with remaining egg/garlic mixture. Place chicken over lettuce and sprinkle with flour tortillas.
Bake for 20 minutes in the preheated oven, or until chicken is cooked through and juices run clear.
