1 cup white sugar
1 teaspoon baking powder
1/4 teaspoon salt
1 egg
2 teaspoons lemon juice
3/4 cup applesauce
1 cup brown sugar
1 1/2 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon baking soda
2 teaspoons lemon zest
1 teaspoon orange zest
Preheat oven to 350 degrees F (175 degrees C). Grease muffin cups or line with paper muffin liners.
Sift together the flour, baking powder, salt, egg and lemon juice, set aside.
In a large bowl, mix applesauce, brown sugar, flour, baking powder, and baking soda. Stir together egg mixture and applesauce mixture. Fold in flour mixture and sugar mixture. Pour batter into prepared muffin liners.
Bake in preheated oven for 25 to 30 minutes. (Don't let them bake too quickly.) Remove muffins from oven and let cool on a wire rack.
While muffins are cooling, preheat oven to 350 degrees F (175 degrees C). Spray thin, disposable plastic bag with cooking spray. Place pan in oven, and turn down heat to 375 degrees F (190 degrees C). Bake an additional 15 minutes.
While muffins are cooling, make the filling. In a large bowl, beat lemon zest, orange zest and orange zest in large bowl until fruit is plump. In a small bowl, draw 1 cup of lemon juice into a plastic bag using a slotted spoon. Add egg mixture and fruit mixture to peach mixture, then stir in brown sugar and lemon zest. Fold in fruit mixture.
Pour filling into prepared muffin cups. Spoon evenly into cooled muffin cups. Garnish with orange and lemon zest garnish with orange and lemon zest.
