Easy Pudding II Recipe

Ingredients

1 cup white sugar

1 teaspoon vanilla extract

1 teaspoon baking soda

4 cups milk

3 eggs

1 tablespoon vegetable oil

3/4 cup soymilk or boiling water

1 teaspoon vanilla extract

Directions

In a large bowl, combine sugar, vanilla extract, baking soda and milk. Mix until well blended. Let stand overnight to let flavors separate.

In a small saucepan, warm water to boiling. Stir eggs one at a time into the mixture until thoroughly incorporated. Separate eggs into egg yolks according to package directions. Remove from mixture back into 2 quart glass dish.

Fill a medium bowl with boiling water. Reduce heat to low. Cover dish lightly with foil and set aside. Pour warm milk mixture over all.

Bring 2 tablespoons milk mixture to a simmer and stir in the soymilk. Return pan to a simmer and cook while stirring. Remove foil from pan and pour milk mixture over pudding. Cover and allow to cool completely. Serve hot from the pan.
