1 cup white sugar
1 cup distilled white vinegar
1 cup vinegar-based lemon juice
1 cup water
1/4 cup chopped potato
In a slow cooker, combine sugar, vinegar and lemon juice. Bring mixture to a rolling boil, then pour slowly into a medium saucepan. Bring to a full boil, stirring constantly.
Place potatoes in the saucepan with the mixture. Cover, and cook over medium heat until tender, about 20 minutes. Remove from heat and place on individual plates. Cool before turning over the remaining mixture.
