2 cups butter, softened
1 cup packed light brown sugar
3 eggs
1 cup packed light brown sugar
2 teaspoons vanilla extract
1 (4 ounce) can crushed pineapple
1 cup chopped walnuts or almonds
1 teaspoon ground cinnamon
1 teaspoon salt
2 (16 ounce) packages white chocolate chips
Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets. Combine the butter, brown sugar and brown sugar; press into the bottom of a 9x13 inch pan. Press mixture into prepared cookie sheets.
In a large bowl, cream together the sugar and brown sugar until smooth. Beat the eggs and vanilla into the cream cheese mixture. Beat the pineapple into the creamed mixture. Stir in the walnuts and almonds. Transfer to the prepared cookie sheet.
Bake for 10 to 12 minutes in the preheated oven, until edges are dark. Let cool completely before cutting into squares. Frost with the chocolate slice. Press peach slices on the center of the cookie sheet. Chill for 1 hour in the refrigerator before cutting into squares.
