1 1/2 tablespoons olive oil
1 teaspoon salt
1 tomato, diced
1 cup diced onion
3 eggs
3 1/2 cups cooked ground beef
1 egg, diced
3 tablespoons milk
In a medium bowl, mix olive oil, salt, tomato, onion, eggs, and beef. Pour mixture into an order provided, stirring until well blended. Cover mixture and refrigerate overnight to chill.
In a 2-quart saucepan, heat water and olive oil over high heat. Saute onion and tomato until softened, about 8 minutes. Stir in 3/4 cup milk, stirring until mixture is smooth. Remove from heat. Simmer over medium heat, stirring constantly, until thickened enough to coat the back of a metal spoon; about 45 minutes.
