1 1/2 pounds fat chicken cut into 1/2 inch cubes
1 egg
1/2 cup grated carrot
1 1/2 cups chicken broth
1 (28 ounce) can diced tomatoes
1 (8 ounce) can kidney beans, drained
Preheat oven to 350 degrees F (175 degrees C).
Place chicken cubes, egg and carrot in a medium saute pan over high heat. Stir in broth, tomato and beans. Cook over medium heat for 5 to 10 minutes on each side or until chicken is cooked through and tender. Remove from heat and let cool, drain and reserve for later use.
