1 (6 ounce) can sliced pineapple, drained
1 cup chopped peaches
2 tablespoons butter
1 cup chopped onion
1 tablespoon chopped fresh ginger root
1/3 cup white sugar
2 teaspoons heavy cream
2 tablespoons lemon juice
1 tablespoon lemon zest
1 teaspoon vanilla extract
1 cup lemon juice
2 tablespoons fresh lemon zest
Fill a large saucepan with ice, and place in freezer according to package directions.
In a medium bowl, combine pineapple, peaches, butter, onion, ginger, sugar, cream, lemon juice, lemon zest, and vanilla extract. Mix well. Pour mixture into ice-covered containers.
Place affected containers in freezer container. Cover loosely with plastic wrap, and allow containers to chill before serving.

I placed mine on a plate and let it steep 5 mins nd then broke up the pieces with a paper towel, served this as a side dish and I prepped 35 elephants for the sunrise! Literally, with the addition of a tiny lemon peel. Love this recipe!
