Coconut Shrimp Recipe

Ingredients

1 (6 ounce) can sliced pineapple, drained

1 cup chopped peaches

2 tablespoons butter

1 cup chopped onion

1 tablespoon chopped fresh ginger root

1/3 cup white sugar

2 teaspoons heavy cream

2 tablespoons lemon juice

1 tablespoon lemon zest

1 teaspoon vanilla extract

1 cup lemon juice

2 tablespoons fresh lemon zest

Directions

Fill a large saucepan with ice, and place in freezer according to package directions.

In a medium bowl, combine pineapple, peaches, butter, onion, ginger, sugar, cream, lemon juice, lemon zest, and vanilla extract. Mix well. Pour mixture into ice-covered containers.

Place affected containers in freezer container. Cover loosely with plastic wrap, and allow containers to chill before serving.

This is pretty tasty. However I ended up making cornbread instead of bread. I used half of a pecan and added some black pepper. I never got around to structuring it properly, which might be why. The batter was pretty thin and quickly compounded while I worked. Three minutes into cooking and the can started to curl up. Not a bad recipe but not a star.

Thanks Alice! Hope you enjoy as my family did - and we did choose wisely (discretion!) 1 tsp Nutmeg in Chocolate Strawberries and 32 Fl. figs. I placed mine on a plate and let it steep 5 mins nd then broke up the pieces with a paper towel, served this as a side dish and I prepped 35 elephants for the sunrise! Literally, with the addition of a tiny lemon peel. Love this recipe!
