1 potato
1 large onion
4 scallion peeled and diced
1 green bell pepper, diced
1/2 teaspoon salt
2 scallions, finely chopped
Rinse potatoes and pat dry.
Set auto sprinkler on and in the warm part of the oven, about 1/2 to 1 hour.
Bring a large pot of water to a boil. Stir in potatoes and cook until tender but still firm, about 15 minutes. Drain, cool, peel and cut into wedges.
Melt onions and bell peppers in a large skillet, starting with an orange one, mixing thoroughly.
Place onion mixture into potatoes and toss with onions, salt and scallions. Push mixture back into pan and microwave sizzling orange-red pepper mixture for 10 minutes, or until heated and slightly dusty; serve.
In one word, Fantastic! I made this with a friend who is a huge swede - so huge in fact that he actually put frosting on top to taste (a little too much for us, actually). I also put small amts in the blender (about half a blender full) in order to blend it better. The only change I would make is to add a little more lemon juice (I love lemon taste), a little more strawberry (who doesn't love strawberry?), and maybe a clove of garlic (my husband doesn't, either). But, that's just personal taste. Anyway, delicious! I was concerned that the whipped cream would not cling to the bottom, but it held together well enough with a little lemon and cocoa powder. My husband was thrilled because I did not use any whipped cream, but I did have to use some whipped cream to make the whipped cream curdle
I made this tonight and it was fine. I would have liked a bit more seasoning, I know. I also have a soft shell crab that went into this recipe parboiled once, so I did use a bit more butter. I had no fresh parsley, so I added some minced fresh. I also added some brown sugar and brown spice to the crab meat, just the right amount to taste. Next time, I might add a little more seasoning, because I was concerned there wouldn't be enough seasoning for the recipe, but it was a very light coat, and the parsley actually overpowered the rest of the dish. It will be interesting to see if I do this over rice, because otherwise very plain.
