1 cup sherry
1 apple - peeled, cored, and chopped
3 egg yolks
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 pinch salt
1 tablespoon cold water
Preheat oven to 300 degrees F (150 degrees C). Brown paper towels and grease a 9x5 inch loaf pan.
In a medium bowl, whisk together sherry, apple, egg yolks, cinnamon, nutmeg and salt until well blended.
Divide the mixture into 20 portions. Top each portion with 1/2 teaspoon ground nutmeg, 2 tablespoons water.
Bake at 300 degrees F (150 degrees C) for 30 minutes. Invert the paper towel and place the baked slices on a flat surface.
