3 tablespoons vegetable oil, divided
1 (1 ounce) package taco seasoning mix
1 1/2 tablespoons vegetable oil
1 red onion, sliced
1 green bell pepper, sliced
1 Mexican tomato, seeded and diced
1 (16 ounce) can whole kernel corn, divided
2 cups shredded Cheddar cheese
1 cup sliced red onion
1 (8 ounce) can taco sauce
1 small tomato, chopped
Mix each taco, seasoning, and oil into a small bowl; set aside.
Heat oil in a large skillet over medium heat. Saute brown beef, onion, and peppers until well coated.
Pour taco seasoning into a small bowl. Stir in taco liquid, curry powder, tomato, and tomato. Return meat mixture to skillet. Cook, stirring, until tortilla dissolves with juices. Top with Cheddar cheese. Refrigerate for 10 minutes or until firm.
