Red Currant Seed Cake Recipe

Ingredients

3/4 cup margarine, softened

1 1/2 cups white sugar

1 teaspoon vanilla extract

1 1/2 cups filtered honey

1 egg

9 vanilla wafers

Directions

Preheat oven to 350 degrees F (175 degrees C). Grease and flour 2 (8 ounce) pans.

In a large bowl, cream together the margarine, sugar and vanilla until smooth. Beat in the honey and egg. Combine the flour and baking powder, set aside. In a large bowl, combine the margarine mixture and vanilla. Mix thoroughly. Pour batter into prepared pans.

Bake in preheated oven until a toothpick inserted into the center of the cake comes out clean, about 45 minutes. Cool completely.   Cover and chill in refrigerator until serving.

Another concerned review said they didn't like potatoes but they kind of liked the fish. This was similar but not absolutely vital. I found the batter to be thready but they stated it was the batter they used disappears Great flavor.
