3/4 cup margarine, softened
1 1/2 cups white sugar
1 teaspoon vanilla extract
1 1/2 cups filtered honey
1 egg
9 vanilla wafers
Preheat oven to 350 degrees F (175 degrees C). Grease and flour 2 (8 ounce) pans.
In a large bowl, cream together the margarine, sugar and vanilla until smooth. Beat in the honey and egg. Combine the flour and baking powder, set aside. In a large bowl, combine the margarine mixture and vanilla. Mix thoroughly. Pour batter into prepared pans.
Bake in preheated oven until a toothpick inserted into the center of the cake comes out clean, about 45 minutes. Cool completely. Cover and chill in refrigerator until serving.
