Babka II Recipe

Ingredients

3 cups all-purpose flour

7 teaspoons baking powder

1 teaspoon baking soda

1 teaspoon salt

1 cup butter or margarine, softened

1 cup brown sugar

1 cup milk

3 1/2 cups raisins

1 cup brown sugar, sifted and divided

2 eggs

1/3 cup margarine, softened

1/3 cup white sugar

1 teaspoon vanilla extract

1/2 cup white sugar for decoration

1 cup chopped almonds

1 cup chopped walnuts

Directions

Sift together the flour, baking powder, baking soda and salt; stir into the brown sugar mixture until evenly combined. Mix in the butter or margarine with the brown sugar. Combine the brown sugar with the brown sugar two thirds. Mix the milk and raisins with the brown sugar mixture. Mix in the remaining half of the brown sugar. Mix in the raisins, 2 ounces at a time, continuing to stir until well mixed. Blend the remaining fruit mixture with the brown sugar mixture.

Dredge the bread slices in flour to form a smooth and even layer. Place 1/2 cup of the raisins on the bread slice. Spread below and around the oiled layer, using toothpicks to keep them in place.

Bake in preheated oven for 30 minutes, until an inserted toothpick on the surface of the loaf comes out clean. Meanwhile, instead of sheets of aluminum foil, put sliced almonds and walnuts on top of the loaf.

Meanwhile, fill loaf with cream cheese and spread over the raisins. Refrigerate or serve warm.
