Chocolate Mint Chunk Cookies Recipe

Ingredients

1 cup butter, softened

1 cup brown sugar

1 teaspoon vanilla extract

1 cup all-purpose flour

1 teaspoon baking powder

1/4 teaspoon salt

1/2 cup dark brown sugar

1 cup butter, softened

1 teaspoon vanilla extract

1 cup all-purpose flour

1 cup packed light brown sugar

1/2 cup yellow sugar

1 tablespoon confectioners' sugar for dusting

Directions

Preheat the oven to 375 degrees F (190 degrees C).

In a medium bowl, cream together the butter, brown sugar and vanilla until smooth. Mix in the flour, baking powder and salt; gradually stir into the creamed mixture. Mix in the dark brown sugar, light brown sugar, yellow sugar and confectioners' sugar. Drop cookie by tablespoon filling into the prepared cookie crust.

Bake in the preheated oven for 8 to 10 minutes, or until the edges of the cookies are golden. Cool on a wire rack. Dust with confectioners' sugar before removing from the cookie sheet.

This was delish! I used a lot of vegetables that I didn't have at hand and it came out pretty. I would have thought it would be a gazillion cheaper in a Mexican grocery store but it was cheap enough in the grocery store. My husband complained when he tried to flavor it but he said it really wasn't strong enough for him. I will have to tweak it later.
