1 1/2 cups margarine, melted
3/4 cup white sugar
1/4 cup vegetable oil
2 eggs
1 1/4 cups Mexican-style flour
1 teaspoon vanilla extract
1 cup light popcorn
1 cup white sugar
1 cup sifted all-purpose flour
2 teaspoons baking soda
1 teaspoon baking powder
1/2 teaspoon salt
Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
Melt margarine with the white sugar and blend it into the margarine. Add the oil while stirring, then add eggs and egg mixture alternately. Stir until the eggs are double in volume.
Dump mixture into the rest of the batter. Using an electric mixing tray, stir together the flour, baking soda, baking powder and salt. Drop by rounded spoonfuls onto the cookie sheets.
Bake for 8 to 10 minutes in the preheated oven.
