1 cup unsalted butter
1 cup white sugar
2 eggs
1 cup rolled oats
1 teaspoon vanilla extract
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
3/4 cup all-purpose flour
3 cups rolled oats
1/2 cup chopped pecans
1/2 cup brown sugar
1/2 cup milk
1/2 cup flaked coconut
Preheat oven to 350 degrees F (175 degrees C). In a small bowl, stir together butter and sugar. Mix together until smooth. Stir in eggs, one at a time. Beat in oats, vanilla and salt. Stir in flour, 3 cups rolled oats, 1/2 cup chopped pecans and 1/2 cup brown sugar. Drop dough by rounded spoonfuls onto prepared cookie sheets.
Bake for 12 to 15 minutes in the preheated oven. Cool on cookie sheets for 2 minutes before removing from baking sheet to cool completely.
