Ranch/Chocolate Gingerbread Recipe

Ingredients

1 cup white sugar

2 cups water

1 teaspoon ground ginger

2 cups bread flour

1 teaspoon baking soda

1/2 teaspoon salt

1/2 cup unsalted butter

3 eggs

1 (10 ounce) can crushed pineapple, with juice

1/3 cup white sugar

2/3 cup chopped pecans

3/4 cup confectioners' sugar for coating

Directions

Preheat oven to 350 degrees F (175 degrees C).

In a medium bowl, combine the sugar, water and ginger. Mix well and set aside until slightly thickened.

In the bowl and cream-style designator at the top of the double boiler, stir together the flour and baking soda. Stir in the mixture, then gradually stir in the butter and eggs. Gradually stir in the pineapple mixture, use a wooden spoon to stir and pour into prepared pan.

Bake in the preheated oven for 35 to 40 minutes, or until a toothpick inserted into the center comes out clean.
