1 (16 ounce) package cream cheese, softened
1 (16 ounce) can fettucini
1 (4 ounce) can diced tomatoes
1/4 cup milk
1/2 cup cooked black beans
1/2 cup diced red bell pepper
salt and pepper to taste
1 (6 ounce) container sour cream
1 (12 ounce) container frozen whipped topping, thawed
In a medium bowl, mix cream cheese, fettucini, and tomatoes with milk. Stir in black beans. Season with salt and pepper and set aside. Melt sour cream in a small saucepan over medium heat.
In a medium bowl, beat cream cheese until smooth. Whisk in sour cream until smooth. Spread mixture over bottom of prepared pan. Sprinkle with drained fettucini and remaining tomatoes. Pour cream cheese mixture over cream cheese layer and spread with thawed fettuccini.
Bake in preheated oven for 45 to 50 minutes, or until thick and warm.
