1 cup all-purpose flour
1/2 cup white sugar
1/2 teaspoon salt
1 cup unsalted butter
1 egg
1 teaspoon vanilla extract
2 cups rolled oats
1 cup semisweet chocolate chips
Preheat oven to 375 degrees F (190 degrees C). Line baking sheets with parchment paper.
In a medium bowl, stir together the flour, sugar and salt. Stir in the butter and egg. Stir in the vanilla, oats and chocolate chips.
Drop dough by heaping spoonfuls onto the prepared baking sheet, and bake for 12 to 15 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
