2 pounds large potatoes, quartered
2 tablespoons butter, melted
1/4 cup chopped celery
2 tablespoons margarine
salt and pepper to taste
In a large pot over medium heat, melt the butter or margarine. Saute the potatoes for about 2 minutes, until tender. Stir in celery, margarine, salt and pepper. Bring to a boil and reduce heat to low, simmer for 1 hour.
