2 cups butter, melted
1 cup white sugar
1 egg
2 teaspoons vanilla extract
2 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup chopped walnuts
1 tablespoon water, or as needed
1/2 cup chopped pecans
1/2 cup confectioners' sugar
1/2 cup shortening
1/3 cup milk, or as needed
1/2 cup white sugar
1/3 cup evaporated milk
1/2 cup packed brown sugar
1/3 cup unsalted butter, melted
Preheat oven to 350 degrees F (175 degrees C). In a medium bowl, cream together the butter and 1 cup sugar. Beat in the egg and 2 teaspoons vanilla. Combine the flour, salt, baking powder and baking soda; stir into the creamed mixture. Roll the dough into 1 inch balls and roll the balls into walnut sized balls. Place them onto ungreased baking sheets, 1 inch apart.
Bake for 8 to 10 minutes in the preheated oven. Cool on baking sheet for 5 minutes before removing from baking sheets. Let cookies stand on baking sheets before removing from the baking sheets.
To make the frosting: In a medium bowl, cream together 1/2 cup of shortening and 1/3 cup milk. Stir in the 1/2 cup sugar, then the eggs, until smooth. Gradually stir in the vanilla, then the flour mixture. Finally, stir in the nuts. Drop the cookies by rounded teaspoonfuls onto the prepared cookie sheets.
